Nigerian Jollof rice is one of West Africa’s most beloved and iconic dishes, known for its vibrant red color, smoky flavor, and rich, spicy taste. Ingredients:

To make Nigerian Jollof rice for about 4-6 people, you’ll need:

  • 3 cups of long-grain parboiled rice
  • 4 large tomatoes (or 1 can of plum tomatoes)
  • 1 red bell pepper
  • 2 scotch bonnet peppers (adjust for heat)
  • 1 large onion (half for blending, half sliced)
  • 3 tablespoons of tomato paste
  • 1/4 cup vegetable or sunflower oil
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 2-3 seasoning cubes (like Maggi or Knorr)
  • 2 cups chicken or beef stock
  • Salt to taste
  • Bay leaves (optional)

Preparation Steps:

  1. Blend the base
    In a blender, combine tomatoes, red bell pepper, scotch bonnet, and half an onion. Blend until smooth. This is the flavor-packed base of the Jollof rice.
  2. Fry the sauce
    Heat oil in a large pot. Add sliced onions and sauté until translucent. Stir in the tomato paste and fry for a few minutes to reduce its rawness. Add the blended mixture and cook on medium heat for 10–15 minutes, stirring occasionally, until the sauce thickens and the oil starts to separate.
  3. Season the stew
    Add thyme, curry powder, seasoning cubes, and salt. Pour in the stock and bring the mixture to a simmer. Taste and adjust the seasoning as needed.
  4. Cook the rice
    Wash the parboiled rice thoroughly to remove excess starch. Add it to the stew and stir well to combine. The liquid should just cover the rice. Reduce the heat to low, cover tightly, and let it cook for about 30 minutes. Avoid stirring too often to prevent mushiness.
  5. Final touches
    Once the rice is cooked and the liquid is absorbed, gently fluff with a fork. For an authentic smoky flavor, allow the rice to slightly burn at the bottom — this is known as “party Jollof.”
